Short version: Horumon Akashiroya is a place for people who like offal. Even with a menu built around horumon, the differences between cuts are pronounced enough that it never gets monotonous.
One minute from Nishitetsu Ijiri Station, and open straight through from 11:30 to 22:30, so it is easy to drop into on impulse.
Two warnings first: smoking is permitted at every seat, and neither credit cards nor electronic money are accepted. If smoke bothers you, or you carry no cash, plan accordingly (QR payments do work).

Start with sumotsu (pork stomach in vinegar)

My first order was sumotsu — finely cut pork stomach, translucent, with an unmistakable snap to it.
The acidity is not aggressive and does not linger, which makes it exactly right before the grilling starts. The texture makes you chew, and taken between horumon it resets the palate.
Ordering it first and saving a little for after the fattier cuts turned out to be the right move.
The horumon assortment shows the differences

The assortment brings horumon shiro, premium horumon aka, heart, liver and stomach on one plate. The texture differences are visible before anything hits the grill, which shapes how you approach each one.

Tongue and belly, grilled at your own pace

Tongue is cut thick, and a quick sear on the surface brings out the toastiness. There is real spring to the bite, and the flavour of the meat itself reads clearly.

Belly carries plenty of fat, and the sound and smell of it dripping onto the grill does its work. To keep it from turning heavy, grilling one slice at a time suited me.
Around here it became clear that controlling the pace and doneness yourself is itself part of the satisfaction.
Comparing premium horumon aka, loin and mino

Premium horumon aka made more of an impression on the second pass. Beyond the fat, the flavour of the meat builds as you chew, and it became obvious why this is what horumon people order.

Loin leans lean, resists toughening even when well grilled, and opens up as you chew.

Mino (tripe) has a distinctive chew, and eaten after a run of tender cuts, the contrast makes a clean break.

Front-load the fatty cuts and the leaner ones stop registering later. Keeping one plate of sumotsu in reserve gives you a reset at any point.
Grilling as the experience

Eating surrounded by smoke and the sound of the grill is an experience that includes the room, not just the food. Grilling at your own pace means never feeling hurried, and the meal naturally stretches out.
That rhythm of grilling a little and eating a little is what made this a meal I remember.

Note that smoking is allowed at every seat. Between the grill smoke and cigarette smoke, your clothes will absolutely smell of it. Choose what you wear if you have somewhere to be the next day.
Afterwards
Looking back, even a menu centred on offal stays varied because the cuts differ so clearly. Anyone who likes horumon will find this satisfying.
The smoke and the volume of fat will divide opinion. But for anyone who wants the time spent grilling their own food, it belongs on the list.
Budget is 2,000-3,000 yen per person. For this at that price, it is somewhere you could go regularly.
